Job Description
- Starting at $19/hour

- Only work when production works - it may be 3-5 days per week
- Located in Buffalo Grove, Illinois
- Monitor dough temperature, weight, thickness, and rise time to ensure consistency. Verify crust color and texture after baking/par-baking
- Perform hourly visual checks to ensure correct topping distribution, weight, and centering (cheese, sauce, pepperoni, vegetables) according to product specifications
- Monitor oven temperatures, freezer dwell times, and blast freezer exit temperatures to ensure food safety critical limits are met
- Execute and document Critical Control Point (CCP) checks (e.g., metal detection, cooking temperatures, cooling) as outlined in the HACCP plan
- Conduct daily pre-op inspections of production machinery (conveyors, sauce depositors, slicers) and perform ATP swabbing to verify sanitation effectiveness before production begins
- Enforce Good Manufacturing Practices (GMPs) on the floor, ensuring employees wear proper PPE (hairnets, gloves, frocks) and follow hygiene protocols
- Inspect incoming raw ingredients (flour, cheese blocks, meat toppings, corrugated boxes) for damage, temperature abuse, or signs of tampering
- Verify finished product packaging for correct lot codes, expiration dates, allergen statements, and label accuracy
- Perform net weight checks to ensure compliance with label declarations and minimize product giveaway
- Maintain accurate, legible, and real-time records of all quality checks in hard copy or digital tablets
- Immediately report any non-conformances (e.g., foreign material, undercooked product) to the Production Supervisor and QA Manager; place affected product on "Hold" status
- Collect product samples for laboratory analysis (microbiological testing, shelf-life retention).
- High School Diploma or GED required
- 1-2 years of experience in food manufacturing QA/QC (experience with bakery, USDA meat/poultry, or frozen foods preferred)
- HACCP, PCQI, or SQF certification is highly desirable
- Familiarity with USDA (meat/poultry) and FDA regulations
- Ability to use testing equipment
- Basic computer skills (Microsoft Excel/Word, email)
- Ability to stand for extended periods, work in varying temperatures (hot ovens/cold freezers), and lift up to 50 lbs
