Job Description

- Located in Auburndale, Florida
- Serve plated meals, buffet items following specific service standards (e.g., serving from the left, clearing from the right)
- Execute daily prep lists, including washing, peeling, cutting, and seasoning ingredients
- Prepare complex sauces, soups, and dressings from scratch
- Ensure all prep stations are stocked and ready for service peaks
- Cook and plate dishes according to standardized recipes and presentation guidelines
- Coordinate timing with other kitchen stations to ensure all components of a table’s order are ready simultaneously
- Maintain the correct temperature for all food items using calibrated thermometers
- Adhere to all local health department regulations and HACCP (Hazard Analysis and Critical Control Point) protocols
- Maintain a clean and organized workstation; sanitize surfaces and tools frequently
- Monitor food storage to ensure proper rotation (FIFO: First-In, First-Out) and labeling
- Scrape, rinse, and load dishes into the industrial dish machine
- Wash larger pots, pans, and trays by hand using the three-compartment sink method (Wash, Rinse, Sanitize)
- Ensure all items are bone-dry before stacking to prevent bacterial growth
- Ingredient ExecutionFollow daily prep sheets to prepare vegetables, fruits, proteins, and starches
- Measure and mix ingredients for salads, appetizers, and garnishes
- Execute "bulk" tasks, such as peeling 50 lbs of potatoes or dicing 20 lbs of onions
- Follow standardized recipes to ensure consistent taste across different shifts
- Use scales and measuring tools to portion items (e.g., bagging 6 oz chicken breasts or 4 oz pasta portions)
- Label, date, and rotate all prepared items using the FIFO (First-In, First-Out) method
- Ensures the flavor is perfect before the rush starts
- Cook Quality & Timing Delivers the "wow" factor through taste and heat
