Job Description

- Located in Mokena, Illinois
- Perform routine laboratory testing including pH, water activity (moisture), and other required quality parameters
- Ensure all testing is conducted in accordance with established SOPs and regulatory standards
- Accurately record, review, and report test results in a timely manner
- Identify and escalate any out-of-specification (OOS) results immediately
- Execute and maintain the environmental monitoring program (EMP)
- Collect, track, and document environmental swabs and results
- Ensure compliance with food safety standards (e.g., pathogen control programs)
- Support corrective actions and follow-up activities when deviations occur
- Review and manage Certificates of Analysis (COAs) for incoming materials
- Ensure all vendor documentation is complete, accurate, and aligned with specifications
- Maintain organized records for audit readiness
- Coordinate with vendors to obtain missing or updated documentation as needed
- Maintain accurate and organized laboratory records, logs, and reports
- Support internal and external audits (regulatory and customer audits, as applicable)
- Ensure all documentation meets GMP, HACCP, and internal policy requirements
- Assist with document control, filing, and record retention
- Collaborate with Production and QA teams to ensure product quality standards are met
- Communicate quality concerns clearly and professionally
- Support continuous improvement initiatives within the Quality department
- High school diploma required; Associate’s or Bachelor’s degree in Food Science, Biology, or related field preferred
- Minimum 1–3 years of experience in a food manufacturing or laboratory environment preferred
- Understanding of GMPs, HACCP, and food safety standards
- Experience with lab testing equipment (pH meters, water activity meters, etc.)
- Strong attention to detail and organizational skills
- Ability to manage multiple tasks and maintain accurate documentation
- Basic computer skills (Excel, data entry, document tracking systems)
- Ability to stand, walk, and move between lab and production areas
- Ability to lift up to 50 lbs as needed
- Must be able to work in a manufacturing environment (temperature variations, PPE required)
- Food manufacturing facility with exposure to production areas
- Must follow all GMP, PPE, and food safety requirements at all times
- No personal items allowed in production areas (including phones)
- Accuracy and timeliness of lab testing results
- Compliance with environmental monitoring program requirements
- Audit readiness and documentation accuracy
- Effective communication and escalation of quality issues
